  • 2 cups diced apples pick ones that still got some bite
  • 1/4 cup granulated sugar sweet enough but not too much
  • 1 tsp ground cinnamon adds cozy spice
  • 1 tbsp all-purpose flour to thicken filling
  • 1 tbsp lemon juice adds tang and keeps apples fresh
  • 1 package refrigerated pie crust flaky and easy
  • 1 egg beaten for brushing crust
  • grease for muffin tin
  • optional extra crust pieces for lattices or covers

Equipment

  • 1 Mixing bowl for preparing filling
  • 1 Muffin tin to bake pies
  • 1 Oven preheated to 375°F
  • 1 Pastry brush for brushing egg wash

Method
 

Instructions
  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix diced apples, sugar, cinnamon, flour, and lemon juice until apples are coated.
  3. Roll out pie crust and cut into small circles to fit muffin tin.
  4. Grease muffin tin and press crust circles into the pockets.
  5. Spoon apple mixture into each crust without overfilling.
  6. Add optional top crusts or lattice strips as desired.
  7. Brush tops with beaten egg.
  8. Bake for 25 to 30 minutes until golden and bubbly.
  9. Cool in pan for 10 minutes before removing.

Notes

Store in airtight container or freeze to enjoy later. Reheat in oven to keep crust crisp. Try swapping apples for other fruits like pears or peaches for variety.
